Recipes from around the world ~ Banoffee Pie


Today we travel to England for our next recipe... Banoffee Pie!

The origin of the Banoffee Pie comes from East Sussex, England, and was created by Nigel Mackenzie and Ian Dowding of The Hungry Monk Restaurant.

It is a pie made with a crumbed biscuit base with banana's, cream and toffee. 

Ingredients:

Base
100g melted Butter
250g digestive biscuits, crushed

For the caramel
100g butter
100g dark soft sugar
397g can of condensed milk

For the top
4 small banana's
300ml whipping cream, lightly whipped
grated chocolate

Method:

1. In a bowl, mix the melted butter with the crumbs and mix well. 
2. Spoon mixture into the pie tin, all over the bottom as well as half way up the side. Leave to chill for 10 minutes in the fridge.
3. Melt the butter and the sugar in a non-stick sauce pan, on a low heat, till all the sugar is dissolved.
4. Add the condensed milk and bring to a rapid boil, for 1 minute, stirring all the time till a thick, golden caramel.
5. Spread the caramel over the pie base, cool then chill for an hour. 
6. Carefully split the pie from the tin and place on a serving plate.
7. Slice the banana's and lay them into the caramel.
8. Layer with the whipped cream.
9. Sprinkle a little chocolate on top.
10. Serve.
